The Connor Man Brookie is back this September, and Tiff’s Treats is donating $25,000 from Brookie sales to fund research for pediatric brain cancer. This special dessert bar has quickly become a fan favorite, so we’re sharing an at-home recipe to create the brookie made to honor Connor.
Ingredients:
For the M&M Cookie Dough:
- 1 cup (2 sticks) butter, softened
- 1 cup granulated white sugar
- 1/2 cup firmly packed light brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 1/2 teaspoons salt
- 1/2 teaspoon baking soda
- 2 1/4 cups all-purpose flour
- 1 (9.40 oz.) package mini-M&M chips
For the Brownie Layer:
- ½ cup (1 stick) butter
- 1¼ cup semi-sweet chocolate chips
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup granulated white sugar
- 1¼ cups all-purpose flour
- ½ teaspoon salt
For the Top Layer (Decoration):
- ½ cup mini-M&M chips

Instructions:
Prepare the M&M Cookie Dough:
In a large mixing bowl, cream the softened butter and sugars together using a hand or electric mixer on medium speed until smooth. Add the eggs, vanilla, salt, and baking soda to the butter mixture. Mix on medium speed until well combined and smooth. Gradually add the flour. Mix on low speed until the flour is mostly incorporated, then switch to medium speed until no dry spots remain. Fold in the mini-M&M chips until fully distributed throughout the dough.
Prepare the Brownie Layer:
Melt the butter in the microwave for about one minute. Add the semi-sweet chocolate chips and microwave for an additional minute until the chips are soft and the butter is melted. Stir the melted butter and chocolate together with a spatula until smooth. In a separate mixing bowl, whisk together liquid eggs and vanilla extract for about thirty seconds. Add sugar, flour, and salt to this bowl followed by melted chocolate mixture. Mix on low speed then medium speed until batter is just combined; do not overmix.
Assemble The Brookies:
Using a medium-size cookie scooper portion out twenty-five balls of cookie dough. Lightly coat a nine by thirteen-inch baking pan with baking spray. Press cookie dough balls into bottom of pan forming uniform base layer. Pour brownie batter over cookie dough layer spreading evenly with spatula pressing down lightly ensuring complete coverage of cookie dough layer. Sprinkle half-cup mini-M&M chips evenly over top of brownie layer pressing them down slightly securing them into batter.
Bake:
Bake in preheated oven at three hundred fifty degrees Fahrenheit (one hundred seventy-five degrees Celsius) for forty to forty-five minutes or until top is set edges golden brown.
Cool & Serve:
Allow brookies cooling in pan thirty minutes before cutting individual bars using knife cutting squares serving.
