The City of Austin has gained national recognition for its vibrant food scene and lively music culture. A significant contributor to this transformation is the Austin-Bergstrom International Airport (AUS), which celebrates its 25th anniversary this month. One company that played a pivotal role in setting the tone for the airport is Delaware North (DNC), one of the world's largest entertainment and food service companies.

Terry Mahlum, Delaware North's Regional Vice President, has managed most of AUS’s concessions since its inception. In a recent interview, Mahlum shared insights into the unseen work behind providing travelers with enjoyable experiences at the terminal.

Mahlum stated that he has been with DNC at AUS since its first year of operation in 1999. As regional manager, he oversees operations in Texas airports and Los Angeles International Airport. He expressed his delight at witnessing the remarkable transformation of AUS over time.

When asked about managing the largest airport concession company, Mahlum highlighted their commitment to finding the best of Austin from a brand perspective and their active involvement in community initiatives. He also discussed logistical challenges such as moving their commissary offsite due to airport growth.

Among the first concessions opened in the terminal were Salt Lick Barbecue, Amy's Ice Cream, Austin City Limits, and Book People. DNC started with eight or nine concepts in 1999 and has expanded to 25 local concepts by 2024.

Reflecting on noteworthy moments over the past 25 years, Mahlum pointed out that they initiated the live music program at airports. This concept has now been adopted by several other airports nationwide.

In celebration of AUS’s 25th Anniversary, DNC plans to contribute towards raising $25,000 for the Central Texas Food Bank and will introduce special drinks at Saxon Pub.

When asked about his favorite food concession, Mahlum recommended Salt Lick Barbeque's chopped brisket sandwich. He concluded the interview by expressing that the best part about Delaware North’s partnership with AUS is the sense of place it has created. With local concepts and live music, travelers get a taste of what makes Austin special.
