As the fall season arrives, pumpkin enthusiasts can look forward to a new treat. The Pumpkin Spice Latte cookie has been introduced, combining classic autumn flavors with the popular coffee beverage.

The cookie is crafted using pumpkin for flavor, pumpkin pie spices for warmth, real coffee bits for energy, and powdered sugar as a topping to mimic latte foam. According to the creators, “this flavor might be one of our most prized to date.”

To make these cookies at home, here are the ingredients needed:

– 1 cup salted butter (softened)
– 1 cup white sugar
– ½ cup light brown sugar
– 2 large eggs
– 2 tsp pure vanilla
– 1½ tsp salt
– ½ tsp baking soda
– 4½ tbsp pumpkin puree
– 1 tbsp pumpkin pie spice
– 2 tbsp milk (2%)
– 2 tsp instant coffee
– 2â…“ cups all-purpose bleached flour

For inclusions:

– Additional instant coffee can be added based on personal preference.

For topping:

– Powdered sugar

The baking instructions are as follows:

1. Preheat oven to 375°F.
2. Cream butter and sugars until smooth.
3. Add eggs, vanilla, salt, baking soda, pumpkin puree, and pumpkin pie spice.
4. Mix until blended and smooth.
5. Dissolve instant coffee in cold milk and add it to the bowl; mix well.
6. Add flour and mix until fully blended.
7. Add instant coffee bits evenly into the dough without overmixing.
8. Line a cookie sheet with parchment paper.
9. Scoop dough onto the sheet with spacing between each scoop.
10. Bake for 9–11 minutes until edges are brown but tops remain light.
11. Cool cookies on parchment paper or wire rack after removing from oven.
12. Top with sifted powdered sugar before serving.
